Product Validation & Certification:

Mark Caporale is a Process Authority that is licensed to determine and recommend pasteurization (or cooking) temperatures and holding times to produce a “commercially safe & stable product.”  A Pasteurization Unit Chart (PU chart) can be created for the manufacturer or copacker.  For High Temperature Short Time Pasteurization (HTST) or Kettle pasteurization, temperatures and holding times can be specified.

Beverages (carbonated and non-carbonated)

juice, tea (brewed & flavored), sport drinks, Nutraceutical, dairy, non-dairy nut, alcoholic beverages (wine, spirits, malt), protein drinks.

 

Foods:  Shelf stable, refrigerated & frozen

Sauces, marinades, tapenades, energy and/or protein bars.

 

FDA Category:             

Both high acid (less than 4.6 pH) and low acid (greater than 4.6 pH)

 

Packaging:                   

Cans, Bottles (Glass & PET, HDPE), Pouches

 

Carbonation:                

Non-carbonated and carbonated beverages (maximum carbonation levels also specified for tunnel pasteurized products).

Equipment Validation & Certification:

Pasteurizer (Tunnel Pasteurization and/or HTST and/or Kettle) validation and/or certification for start-up or new products can be performed onsite at manufacturer.  Determination of actual residence time and flow rates will be provided.  For High Temperature Short Time heat exchangers (HTST); this can be for either Plate to Plate, Tube-in-Tube and/or Tube-in-Shell heat exchangers.
