Bar Mix creation for launch of National brand
Job contracted by the owners of marketing company. Created (13) different juice-based flavors of bar mix, commercialized formula for “color, aroma and flavor” attributes that met profit margins needed by owners. Samples were generated initially through Caporale Consulting pilot plant system prior to actual production. This project involved identifying & negotiating with a Copacker, writing manufacturing specifications for production and creating a new “custom bottle and custom neck finish” specific for this hot filled, shelf stable product line. This brand is currently utilized in upper scale restaurants and is being distributed in (40) states.
Smoothie creation for launch of National brand
Working with national juice company, created (9) different smoothies to directly compete against Odwalla and Naked Juice. This involved reverse engineering of formulation, matching nutritional fact panel requirements and creating flavor profiles that would beat competitors in tastings. Shelf life extension to exceed competitors was done through engineered, customized bottle and cold sterilization process.
Infused Syrups and Artisan Extracts
Developed custom extraction process for specific herbs, flowers and spices to create a premium infused syrup line and extracts of berries & fruits. Product line is currently in national distribution.
Fruit Infused Food & Beverage Foam
Bench top formulas were developed through production; manufacturing changes made (trouble shooting start up issues) and completed plant commercialization, with improved production yields. Commercial product is packaged in aerosol can and sold nationally.
Carbonated & Sparkling Beverages (Alcohol & Non-Alcoholic)
Creation of new beverages using Pilot Plant to carbonate samples at various carbonation levels for submission and approval. These can be made shelf stable for sales samples and/or presentations to buyers. Issues of maximum carbonation levels can be addressed for each product and package type depending on manufacturing conditions. Manufacturing Carbonation levels can be specified for cans and bottles.
Energy Drinks
Creation of commercial formulas from ideation and/or recipes into “copacker/manufacturer friendly” formats required. These formulations will correct for % purity, pasteurization parameters and shelf life.
Formulas can be determined & modified to achieve specific Nutritional Facts Panel requirements for vitamin or mineral content. Energy enhancing products can be recommended or specified for the formula.
Protein Drinks
Protein drinks from various sources of protein (whey, soy, pea, and nut) can be formulated to achieve certain protein levels in the final beverage. Protein stability in a beverage is very pH sensitive such that pH of the final beverage must be specified by formulator.
Nutritional Ingredient Enhancements
Formulas and new products can be modified or improved to obtain specific mineral and vitamin requirements such as (25%) RDA Calcium or Magnesium, or (20%) RDA Vitamin B6 by special blending techniques and sources.
Most copackers or manufacturers have specific formats and requirements for commercial formulas. This includes, but is not limited to, a formula (with a minimum number of ingredients) and a manufacturing protocol with the sequence of addition on their template. Recipes can be corrected to commercial manufacturing/Copacker formats and concentrations. This may require creating a throw syrups for 1:3, 1:4 or 1:5 from an original recipe. If the ingredient list is too lengthy, the manufacturer may not be willing to produce the product. In such case, consultant can create a blend that will minimize the total number of ingredients required to be weighed out for the manufacturer.
